As someone who never played the original, that trailer looked like the smash cuts in a movie used to explain why humanity destroyed itself, what the fuck kind of game is this?

It's a rythm game. Each song has an associated video/story, and yeah, those videos are often a bit experimental ;)

So Sayonara Wild Hearts-esque, being rhythm but story-based? But way more intense I assume.

No, it's just that every song has a background video and commonly, if you can focus on the video, it tells a simple story of sorts. But they have no relation to one another and it's just something to have going on in the background. The game is like Beatmania, DDR, etc. in that it's mostly just a big list of songs with many modes and difficulties and you pick them freely. There're some other structured modes where you have more limited song choices or the Mission Mode where it is specific song(s) and with set goals and distractions (stuff like notes that disappear, flipping the screen, etc.).

It's very similar to Beatmania (or similar) but just made to play with a controller. Notes come down a note highway and you hit them as they reach the line. One big appeal are the different modes of play which are 4, 5, 6, and 8 button modes. Within each mode each song has 1-3 difficulty selections as well. So you can stick to 4 button mode and have a full range of easy to incredibly difficult note charts without even having to move on to a higher button mode. I generally find 5 and 6 the most entertaining, for example so I tend to focus on those.

Assuming it's like all the others, and most specifically Respect on PS4, there's loads of unlocks and a fun in-game goal tracking system for all sorts of different things (like total song completion, combos, etc.) which is great to give small goals to work towards as you enjoy all the different tracks.

Okay, cool. So the base games have quite a bit of content to work through on top of little background stories. Sounds like a good time.
I would never describe the game as having background stories as a focus. You will barely be able to pay attention to them since you'll be focused on hitting buttons.

The content depends on what you want to work towards. If it's like Respect, which had 109 songs before DLC, and each song has an average of like 8-9 charts across all the modes and difficulties, just playing through every song even once or twice in different modes and difficulties will take some time. And then if you enjoy working on unlocking things and working on all the stat goals that'll keep you going for a long time. The Mission Mode kind of ramps up super fast so unfortunately it usually feels nearly impossible after just like ten of the fifty (?) challenges.
